Yes, it is easy to take a taxi to Seven Mile Beach, I would recommend visiting the SeaGrape beach in West Bay.You will find a nice beach, concessions, lounge chairs and restrooms there and cruise passengers are welcome there. I am not familiar with the stingray experience on Disney's Castaway Bay or if it would equal the experience offered in Grand Cayman.
