My wife and I have done 2 Girolibero bike and barge tours, one from Venice to Mantua and the other from Aigues Mortes to Avignon.Our experiences were mixed. Common to both were great tour leaders - Natasha in Italy and Rosita in France.The bike routes they chose were great - a nice mix of small towns, countryside and city.

Dont know about self-guided, but my sister and I did a boat-bike tour with Girolibero from Venice to Mantova and it was fantastic. They were very professional and helpful. The shallow bottom barge-boat was quite well equipped and served as our hotel.
